The Ever-Green Soup
Get Started with the Preparation.
The below ingredients are enough to serve 3
- 2 finely chopped broccoli
- 2 tbsp butter
- 2 jalapenos, diced
- 1 spring onion, sliced
- 1 1/2 fresh herbs
- 1 tbsp flour
- 1 cups cheddar cheese
- ½ cup Black Pepper
- Salt to taste
Keep these ingredients handy and then start Cooking
Step 1
In your cooking pan, take salted water (3 cups), add in the chopped broccoli, and cook for around 3 minutes. Once the broccoli turns soft, drain the water and set the broccoli aside.
Step 2
Take a frying pan and place it on the stove over a low flame. Now add in the butter (2 Tbsp). Let it melt. Add in the jalapenos (2) and let it gently cook for 3-4 minutes over low heat.
Step 3
Now it’s time to add the green onion or the spring onion and the herbs.
Step 4
Next, add flour (2 Tbsp) and stir the mixture for another 3 minutes. Next, add half a cup of milk and stir it. Allow the mixture to a boil—season with Freshly Ground Black Pepper and Salt.
Step 5
Lastly, add Cheddar Cheese and Stir well. Next, add in the broccoli. Let it continue to cook for 5 minutes. Serve in large bowls and enjoy!

The below ingredients are enough to serve 3
Ingredients:
- 8 cups tomatoes, peeled & chopped
- 4 cups potatoes, cut into fine cubes
- 5 cups carrots, finely sliced
- 4 cups beans, boiled
- 3 cups uncooked corn
- 2 cups green peas, cooked
- 2 cups onions, chopped
- 2 tsp minced garlic
- 1 tsp salt
- 2 tsp ground pepper
- 2 tsp fresh basil, chopped
- 2 tsp dried oregano
- 2 tsp dried parsley
- 2 tsp tomato paste
- 2 spoon fresh lemon juice, for flavor only
Directions:
Step 1:
Put all the vegetables in a large stainless-steel pot. Add two glasses of water and bring it to boil on a medium-high flame. Add the spices, salt, and pepper, and let it boil for 5 minutes.
Step 2:
Now add all the veggies and let them boil too
Step 3:
Now take a pan and add some butter, chopped garlic, and onions. Toss them until they turn golden yellow.
Step 4:
Next, add the tomato paste and let it sit for some time. Once the butter separates and settles at the corner of the pan, add the veggies and the boiled water with spices.
Step 5:
Cover the soup with a lid and let it boil for 4-5 mins.
Step 6:
Now add the herbs and 2 spoons of lemon juice.
Serve it Hot and enjoy the rainy day.

Creamy Cauliflower Soup
To get started with this soul, keep the following ingredients handy.
Ingredients
- 1 tbsp olive oil, plus more for garnish
- 1 medium onion or spring onion, chopped
- 1 clove garlic, minced
- 1 medium-size cauliflower, cut into small pieces
- 6 cups of vegetable stock
- 3 sprigs of fresh herbs, plus more for serving
- 1 bay leaf
- Salt
- Freshly ground black pepper
- 1/4 cup fresh cream or whole milk
Directions
Step 1:
Place a large clay pot on medium flame and heat oil. Making this recipe in a polished clay utensil will add more flavor and preserve the richness of the ingredients.
Step 2:
Add onion and cook until soft, 6 minutes. Add garlic and cook until they turn golden brown.
Step 3:
Add cauliflower, vegetable stock, herbs, and the bay leaf and bring up to a simmer. Cook until cauliflower is very tender.
Step 4:
Once the vegetables are tender, remove the bay leaf and discard. Use a blender to blender the ingredients in batches and blend until smooth.
Step 5:
Pour the cream and reheat if needed. Garnish with olive oil and fresh herbs.
Your delicious Creamy Cauliflower soup is ready for serving.

Rich Zucchini Soup

Ingredients needed:
- 1 tbsp unsalted butter
- 2 tbsp olive oil
- 1 small finely chopped white onion
- 1 cup paneer/ cottage cheese
- 1 garlic clove, thinly sliced
- Salt to taste
- freshly grounded pepper
- Raw zucchini for garnish
- 1 1/2 pounds zucchini, halved lengthwise and sliced 1/4 inch thick
- 2/3 cup vegetable stock
Let’s Start Preparing:
Step 1
Take a pot and add zucchini and 2 cups of vegetable stock. Allow them to boil.
Step 2
Once the zucchini is tender, add the cottage cheese cubes to it and keep stirring it.
Step 3
Now add some butter and let it form a layer on top.
Step 4
In a pan, take some butter and let it melt on medium flame. Now add garlic and chopped onions. Let it cook well and feel the aroma.
Step 5
Now pour the rest of the soup and take a blender to form a smooth blend.
Step 6
Let it cook for 2-3 minutes; add grounded pepper and salt to taste.

Apple With Walnut Soup

To make this dish, you need:
Ingredients
- 1 large butternut squash, also known as butternut pumpkin
- 1 cup walnuts
- 1/2 cup water
- 1 tablespoon vegetable oil
- 1 large onion, diced
- 1 apple
- 1 tablespoon curry powder
- 2 teaspoons minced garlic
- 1 teaspoon brown sugar
- 4 cups vegetable stock
- Salt and pepper to taste
Let’s Start With The Preparation
Step 1:
Take a baking sheet and lubricate it with olive oil or butter.
Step 2:
Cut the butternut squash in half and pull out all the seeds. Roast the squash and then cool it so that you can peel out the squash.
Step 3:
Create a walnut paste and set it aside.
Step 4:
Heat oil in a large pot over medium heat. Add onion and apple and cook for 10 minutes. Add curry powder, garlic, and brown sugar and cook for 2 minutes more.
Step 5:
Add the onion and apple mixture, roasted squash, walnut mixture, and half the vegetable broth in a blender. Once a thick and smooth paste is formed, place back in the pot and stir in the remaining vegetable broth. Bring to a boil and cook for 5 minutes more.
Step 6:
While the soup is simmering, add sugar, salt, and pepper. If you want, you can add noodles to the soup to make it more filling.
Step 7:
Serve it in a bowl and enjoy the delicious walnut apple soup.
