The final step, called Manteca “to stir together” in Italian; finishes the risotto, the cooked risotto is removed from the heat. A knob of butter and some freshly grated Parmesan cheese are quickly stirred in to add silkiness and flavor. This helps to bind the ingredients together. Then Serve risotto immediately, preferably on warm plates.
