Recipe of Missi Roti
Preparation time – 20 minutes
Cooking time – 20 minutes
Total – 40 minutes
Serves – 4
Ingredients
- 400 grams of Wheat flour
- 150 grams of Gram flour (Besan)
- ½ teaspoon carom seeds (ajwain)
- ½ teaspoon of cumin seeds (Jeera)
- Chopped Coriander leaves
- One teaspoon Pomegranate seeds
- 2-3 Chopped green chilies
- A pinch of salt
- ½ teaspoon turmeric powder
- 200 grams of Diced Paneer
- Two tablespoon oil
- Butter to fry (you can use ghee or oil too)
Method
Step 1: Take a fresh bowl and add 400grams of wheat flour and 150grams of gram flour to it; mix it well.
Step 2: Now take a pan and roast the carom seeds, cumin seeds, and pomegranate seeds on low flame. Don’t overcook the seeds as they burn very fast. Once the seeds are sautéed, put the flame off, pour it into a grinder, and powder it.
Step 3: Add the powder to the mixture, now add the turmeric powder, chopped onions, chopped green chilies. Mix all the spices thoroughly.
Step 4: Once all the spices are mixed, add two tablespoons of oil and a sufficient water amount. Make a dough, don’t make the too soft or tight keep it moderate.
Step 5: Now make small balls of your desired size. Now make rotis out of those ball with some raw flour. Heat a pan for that and prepare the rotis.
Step 6: When the roti is half cooked, add some butter and fry it well. Similarly, cook all the rotis.
Tips
- Cook the roti on a moderate flame.
- While cooking, add pierce the roti with the spatula to have a well-cooked roti from inside.
Recipe for making Achaari Paneer
Preparation time- 20 minutes
Cooking time – 25 minutes
Total -45 minutes

Ingredients
- One tablespoon cumin seeds
- Two re chilies
- ½ tablespoon methi seeds
- ½ tablespoon mustard seeds
- One teaspoon coriander seeds
- ½ tablespoon fennel seeds
- ½ tablespoon kalonji
- One capsicum
- Two medium-sized tomatoes
- Two medium-sized onions
- One tablespoon ginger garlic paste
- One tablespoon Kashmiri red chili powder
- ½ cup of whisked curd
- Two tablespoon chopped coriander leaves.
Method
Step 1: Take a pan and heat it; roast the cumin seeds, red chilies, mustard seeds, methi seeds, and fennel seeds.
Step2: Once the spices are roasted, pour them into a grinder jar and powder it. Now your Achaari masala powder is ready to keep it aside.
Step 3: Take the capsicum, tomatoes, and onions and chop them roughly, then grind them and form their pure.
Step 4: Take a fresh pan, pour a cup of oil into it, then add the kalonji, now add the ginger garlic paste and saute till a nice aroma of it comes out.
Step 5: Add turmeric powder and the capsicum puree and cook it well. Once the mixture is thickened, add some salt and sugar to taste. Once the oil oozes out, add the curd and mix it well.
Step 6: Cover the preparation and cook it for 5 minutes more. Keep stirring it occasionally so that it doesn’t stick to the bottom. If the gravy gets too thick, add some water to loosen it up.
Step 7: Add the diced paneer (cottage cheese) and mix it well, cook it for 4 minutes. Put the flame off, add the coriander leaves, and then transfer the Achaari paneer to a bowl and serve hot.
