Manchurian is an appetizer or a starter mostly in menu these days and people love to order it too. It is an Indo Chinese dish that made my adding a north Indian touch in it. It is a fusion of flavors and spices.
Gobi Manchurian is a variation to it that is prepared with cauliflower (Gobi) instead of cabbage (Patta Gobi).
We make it by taking florets of cauliflower (Gobi) and make a coating of flour and spices and then tossed in sweet-spicy-savory sauce.
It is a veg., gluten-free, vegan dish, which is a tasty option to end your evening snack cravings with minimal cost and time.
It is a healthy option, that’s why it is best suited for kids also, as kids love variations in their food.

Ingredients:
For Gobi Manchurian:-
15-20 florets of Gobi (washed and dried)
Four tablespoon cornflour
One tablespoon Maida
- teaspoon oregano
- teaspoon red chili flakes
- teaspoon chili powder
- cup water
One teaspoon salt or as per your taste
Oil for frying (you can use either an air fryer or an oven for baking for making it healthy)
For The Sauce:-
- capsicum(diced)
- onion(diced)
- carrot(diced)
One green onion (diced)
½ tablespoon garlic (minced)
Two tablespoons red chili sauce
½ tablespoon soya sauce
One tablespoon tomato sauce
One tablespoon vinegar
One tablespoon cornflour
½ cup of water
One teaspoon red chili powder
One teaspoon salt or as per your taste
One tablespoon olive oil
Recipe:
For Gobi Manchurian:-
- Take the clean and dried Gobi florets and keep them aside.
- You can blanch the florets to minimize the oil input. (skip this step if you want)
- Take a bowl and add cornflour, Maida, oregano, chili flakes, red chili powder, salt, and water and make a medium thick paste/ batter.
- Then add the Gobi florets in the batter coat them properly and keep them aside.
- Now for frying/baking:
- If using Oil for frying- Heat oil in a wok on high to medium flame and deep fry the Manchurians, and set aside
- If using an AirFryer-Place the batter coated Manchurians on the tray and spray a little oil and air fry them in a preheated fryer at 200 C for 10 minutes and then flip and then for another 7 minutes or until brown.
- If using an Oven-Place the batters coated Manchurians on the tray and spray a little oil and bake for 35 minutes or until brown on 200 °C.
For The Sauce:-
- Heat the oil in the pan, when heated, add the minced garlic.
- Add onions toss for a while and then the rest of the vegetables- capsicum, carrot, green onion, corn.
- Until the vegetables are cooked, take a small bowl to add red chili sauce, soya sauce, tomato sauce, vinegar and mix it well.
- Then add the sauce mix in the pan, toss in well and then add chili powder and salt to it.
- Now make a slurry of cornflour and water and pour that into the pan.
- Now you can add a bit of more water if you want to have gravy Gobi Manchurian or keep it dry by not adding more of water.
- Now add the golden-brown fried Manchurians in the pan and toss well with the sauce.
- Garnish it with green onions. Serve hot.
You can have it along with fried rice, noodles, or steamed rice (for a healthy option) as per your wish, either dry or Gravy Gobi Manchurian.
Tips:
- When frying the Gobi, make sure that the oil is perfectly heated, neither cold nor boiling.
- Make the batter of thick consistency, neither dripping nor too thick.
- Make sure to use fresh vegetables
- Use healthy oil, if frying.
Fry Gobi florets 4-5 at a time to avoid, spoiling the crispness of the Manchurians.
