Ingredients For Veg Schezwan Fried Rice
- 1 cup basmati or any long-grained rice
- 10 French beans finely chopped
- ¼ cabbage shredded
- 2 carrots finely chopped or shredded
- 2 spring onions finely chopped
- 1 small bunch celery chopped
- 1 cup button mushrooms sliced
- 1-5 garlic cloves finely chopped
- 3 tbsp schezwan sauce
- 3-4 tbsp pepper
- 2 tsp vinegar
- Salt as per taste
- Toasted sesame oil or any cooking oil for stir-frying
Step 1: Boil rice: After boiling some rice, drain them with cold water and keep them aside.
Step 2: For the sauce: In a pan, sauté sliced garlic after the sesame oil heats up for 15 mins. On a high flame, stir the French beans for some minutes until they get softer, followed by carrots, spring onions, button mushrooms, cabbage, and celery. As it turns softer, add schezwan sauce to it and stir.
Step 3: Add rice: Now, start adding the rice in batches in the pan. Put salt, pepper, vinegar, and toss them together. Keep mixing them until the rice is evenly coated. Switch off the gas, plate, and garnish with spring onion greens.
