How to Make Gluten-Free Papdi Chaat?
Step 1
Rice flour, soaked urad dal, turmeric powder, carom seeds, sesame seeds, salt, and one tablespoon of oil should all be combined in a basin before being mixed into a dough. Give it 30 minutes to relax.
Step 2
Create little balls out of the dough now.
Step 3
Grab a piece of plastic and grease it with some oil. Place the prepared balls on the sheet, place a second plastic sheet over it, and flatten the balls.
Step 4
Cut out papdis that are precisely rounded with a cutter. Make holes in the papdis with a fork. Crisp up the papdis in the oil.
Step 5
Now combine fresh coriander, mint leaves, garlic cloves, green chilies, ginger, cumin seeds, salt, sugar, lime juice, and water to make the green chutney. Blend it to make a loose paste.
Step 6
Jaggery, sugar, and tamarind water should be combined in a pan and cooked while being regularly stirred. Cook it until it thickens.
Step 7
Heat the oil in a separate pan, add the cumin, fennel, and onion seeds, and sauté for two to three minutes.
Step 8
Now stir in the syrup that has been produced in the pan. Stir well after adding salt and red chili powder to the pan.
Step 9
Chickpeas, potatoes, tomatoes, onions, coriander leaves, cumin powder, red chili powder, salt, lime juice, and green chutney should all be combined in a bowl.
Step 10
Make a dish, put the papdis in it, and then top them with the prepared topping. Over the papdis, spread sweetened curd. Finish this healthy food with some pomegranate seeds, potato bhaji, sev, and green and red chutney as garnish. Add a little coriander, cumin, and red chili powder.
Last but not least, the crispy besan sev sprinkled on top adds crunch and balances the heat, followed by the chilled creamy yogurt on top. Each participant can make their chaat by setting up the materials like a chaat station. The person will have more freedom to customize their order by adding or omitting toppings as they like.
