Malai kofta is one of the Indian delicacies that are a staple of almost every Indian home and is one of the cultural favorites during any auspicious occasion. Malai kofta is a recipe which consists of dumplings made of mashed potatoes or cottage cheese or any other vegetables.
Malai kofta also is served in a stout gravy, which is made up of cashew nuts, tomatoes, onions, and other exciting vegetables. In India, most of the time, this gravy is either red or white, the color of the sauce depends heavily on the choice of the ingredients.
The perfect way to serve this dish is to serve it along with pepper and butter-laden Indian bread like naan or roti.
Ingredients Needed
For koftas
250 gm paneer
Three large boiled potatoes
One large boiled carrot
½ cup cooked peas
1 Tablespoon Corn Flour
1 Teaspoon Coriander Powder
1/2 Teaspoon Cumin Powder
1 Teaspoon Red Chilli Powder
1/2 Teaspoon Turmeric Powder
1 Teaspoon Salt
1 Teaspoon Fenugreek Leaves
Oil
For gravy
2 Medium Onions
2 Tomatoes
3 Green Chillies
5 Cloves of Garlic
1 Piece of Ginger
12 Cashews
1/2 Cup Cream
1 Teaspoon Cumin Seeds
1/2 Teaspoon Red Chilli Powder
1 Teaspoon Coriander Powder
1/2 Teaspoon Turmeric Powder
1 Teaspoon Salt
1 Tablespoon Oil
After grating, the paneer drains the entire bowl of water.
Boil potatoes, add them to the bowl after mashing them.
After boiling the carrots and peas mash them and then add them to the bowl. This process is optional as you can add any other vegetables or skip adding them altogether, acting plants increase the binding of the kofta and also increase its nutritional value.
After mashing all vegetables add some salt, garam masala, red chili powder, turmeric powder, cumin powder, and coriander powder to the mixture.
Add cornflour and nuts to the mixture.

After dividing this mixture into 20 portions and then deep fry them in healthy oil, make sure you are careful with the koftas as they are pretty fragile, after removing them from the oil keep them over an absorbent paper to drain the oil from the koftas
Preparing The Gravy
Chop the onions and tomatoes finely along with green chilies, ginger, and garlic.
Start by frying the onion and ginger pieces; once they start to add chili and garlic to the mix splutter. Saute the mixture till it becomes brown, as some more raw tomatoes and saute them till they become brown. Roast the cashews and make sure that they don’t get burnt, after roasting them add them to a grinder and make a paste, put three mixture prepared earlier in the blender and make it into a paste too.
After heating some oil in a pan as some Turmeric, green chili and coriander powder to the oil and cook for a few seconds, after pureeing them mix everything.
Now add the koftas to the gravy and make sure that you garnish it with coriander leaves.
