Craving for something cheesy and tasty? This rendition of the Vegetable Lasagna will awe you with glee! Lasagna is originally an Italian dish made with the flat-shaped pasta named lasagne. However, we have altered it to make the tastiest Vegetable Lasagna ever, and we are sure you will love this version of lasagna!

Ingredients for the Vegetable Lasagna

  • 2 Bell Peppers finely chopped into cubes
  • 1 Zucchini chopped into cubes
  • 1 Carrot chopped into cubes
  • Four tomatoes chopped into cubes
  • 270 gms cottage cheese
  • At least four basil leaves or as per preference
  • 2 tbsp Olive oil
  • 3-4 garlic cloves mashed
  • Red Chilli flakes
  • One white onion chopped
  • One small bundle of spinach leaves
  • 1 tsp black pepper
  • Salt as per taste
  • ¾ pound mozzarella cheese
  • 12 lasagna noodles

Method

Step 1: The sauceà Saute chopped tomatoes to make them mushy, then put the tomatoes, basil, garlic, red chili flakes, and salt into a thick paste grinder.

Step 2: Veggies and Cottage Cheeseà Blend the cottage cheese into the grinder and keep it aside. Put olive oil in a pan and follow it by putting in chopped zucchini, carrot, bell peppers, white onion and saute them. After it gets half-cooked, put in spinach leaves until they wilt. Switch off the gas and mash the mixture with the cottage cheese kept aside and salt and pepper.

Step 3: Layeringà Spread a layer of the tomato sauce first, cover it with lasagna noodles, put a thick layer of the veggie mix, spread tomato sauce on that layer again, and repeat the process until you fill the container for the lasagna. On the top, shredded mozzarella cheese over the lasagna.

Step 4: Bakingà Cover the container with a thin foil and bake it in a preheated oven for 25 minutes or when you see the cheese melting. Then, uncover it and bake it again for 10 to 15 minutes. Enjoy the creamy lasagna with your loved ones.
