Ingredients For Gulab-Jamuns

  • Milk Powder-(1Cup)
  • Milk-(2 tbsp)
  • Ghee/Oil-(As required)
  • Maida-(5 tbsp)
  • Curd/yoghurt-(1tbsp)
  • Baking soda-(1pinch)
  • Pistachios-(1tbsp)

To Prepare The Sugar-Syrup

  • Sugar-(1.25 to 1.5 Cups)
  • Water-(1.5 Cups)
  • Green Cardamom-(4 Pods)
  • Rose Water-(1 tsp)

Cooking Method:

For The Sugar-Syrup

Add 1.5 cups of sugar and slightly crushed Cardamoms to a pot. Add water to it and put the pot on the flame to boil until it turns a bit thicker. To check the consistency of the syrup, put a drop of it on a plate, let it cool down and check the consistency with your finger. Add rose water to it.

To Prepare The Dough

Mix 1cup milk powder,¼ cup+1 tbsp of maida, a pinch of soda in a bowl entirely, and sieve it. Add 1tbsp of ghee/oil to it and mix it well. In a separate bowl, take the yogurt and milk, mix it properly. Add 1.5 tbsp of this mixture to the previous. If the dough is still dry, add some milk, mix it properly. It will turn to a sticky dough, so grease your fingers and make a dry yet soft dough. Make 14 to 18 small balls out of it.

To Make Gulab Jamuns

Check if the syrup is still hot or heat it. Keep it on the stove only. Put a pan on the stove and pour ghee/ oil to it; make sure it is just medium hot. Now add a ball to check if its size is increasing slowly. Now add all the balls(depends on the size of the pan) and wait till it turns golden brown. To fry them evenly, stir them gently till they turn golden brown. Take them out using a strainer, make sure the oil has been completely removed. Add them to the mild hot sugar syrup. Take them out after a bit, and garnish them with pistachio.
