Ingredients For Veg Hot and Sour Soup

  • 2 onions finely chopped
  • 7 garlic cloves finely chopped
  • 1 inch ginger chopped
  • 10-12 French beans cut diagonally
  • 1tbsp oil
  • 250 gms fresh button mushrooms/any other mushrooms sliced
  • A mixture of 1tbsp corn starch and water
  • 2 shredded carrots
  • ¼ red/green cabbage finely chopped
  • 1 small bunch celery finely chopped
  • Veg stock/water
  • 1 tsp soy sauce
  • 1tbsp rice vinegar/any other vinegar
  • 1tbsp pepper
  • Salt
  • Cilantro or coriander for garnishing

Method

Step 1: Stir-fry: Stir fry onions, garlic, and ginger after oil heat up in a pan/kadhai. Fry the French beans and mushrooms until golden, and then put all other veggies together.

Step 2: The soup: Add 3-4 cups of vegetable stock or water. Add soy sauce and then salt to it. Boil on a medium flame and add the corn starch mixture into it. When the soup thickens, add pepper and lastly vinegar to it. Mix and switch it off after garnishing it with cilantro or coriander leaves.
