Ingredients For Minestrone Soup
- 1 zucchini cut into cubes
- ½ diced potato boiled
- ½ diced carrot boiled
- A handful of cut French beans boiled
- A handful of corn kernels boiled
- ¼ diced cauliflower boiled
- 1 tbsp Tabasco sauce
- 2 tbsp tomato ketchup/sauce
- 3 tomatoes
- Some basil leaves
- 2 garlic cloves
- ½ tbsp celery finely chopped
- ½ capsicum finely chopped
- 1 cup shell-shaped or other pasta
- ½ tsp cornflour
- ½ tsp oregano
- 1 tbsp olive oil
Step 1: Cooking the soup: Put olive oil in a stockpot and sauté capsicum when it heats up. Add celery, basil leaves, and zucchini to stir them together. Add 3 tomatoes pureed with 2 garlic cloves into the mix.
Step 2: Add sauces: Put tomato ketchup and tabasco sauce in it. Meanwhile, parboil cut potato, carrot, French beans, corn, and cauliflower in another utensil and add the vegetable stock to the soup, followed by boiled veggies. Add salt.
Step 3: Add Pasta: You can add shell pasta to the soup. Add a mixture of cornflour and water to it. Finally, put some oregano in it, and the soup is ready.
