This is a Moroccan dish and is perfect for an Easter Breakfast. It is tasty, filling, and very nutritious. It contains proteins and good fiber.
Ingredients For Spinach Pie – Loaded With Exotic Spices
- 1tbsp cumin seed
- 2 tbsp olive oil
- 2 finely chopped onions
- 150g green lentils
- 300g basmati rice
- 100g green lentils
- 1tbsp chopped garlic
- 1 nutmeg
- 1tbsp turmeric
- 1/2 tsp spices of your choice
- 300g spinach
- 1tbsp chopped mint leaves
- 2tbsp lemon juice
- 200g grated veg feta cheese
- 2 small packs of filo pastry
- 100g butter
- 1 cup yogurt
Ingredients For Salad:
- 1 chopped cucumber
- 1 chopped onion
- 1 large tomato
- 1 cup parsley leaves
- 1tbsp vinegar
- 2 tbsp oil
How To Make:
This complicated yet yummy recipe is divided into five stages. It will take around 2-3 hours to prepare this. It’s Easter, so spending time to make something special is not a bad deal.
Stage 1:
Take a saucepan and heat it well, toast a few cumin seeds and grind them well with a pestle and mortar. The next step is to add oil to the pan and then add onions and fry them well. Parallelly, in another pan, boil 2 cups of water and add the green lentils to it. Allow it to boil for 20 minutes. Now cook rice in a pan for 5-7 mins. Post this, drain out the water from the rice and the lentils and allow them to dry.

Stage 2:
Take some water in a kettle and cook garlic and onions for 2-3 mins. Now grind all the whole spices with pestle and mortar and add them to the ginger and onion mixture. Now add nutmeg powder and turmeric to the onions and spices and mix them well.
Stage 3:
By now, your spinach has boiled; now, rinse the spinach with cold water and drain out the water and let it dry. Now chop the spinach and add the onion with spices mixture. Now, pour the entire mixture into the rice and add lemon juice, lentils. Stir the feta only once the mixture is cool.
Stage 4:
Now, let’s begin with making the pie. Take four to five sheets of vegan filo and spread a generous amount of butter on each sheet. Lay them one on top of the other. Now take another four sheets and better them well. Repeat this step with the three final sheets of filo.
Stage 5:
Lay the rice filling in the center of the filo. Leave the edges free. Brush olive oil around the edges and tightly tuck the edges. Next, roll the filo over the filling. Keep rolling the first bunch of filo, under they look like a long cutlet. Now coil the sausage back on itself. Your pie preparation is now almost over. Place the coil on the baking tray. Now let the coil cool for one day.
Stage 6:
After 24 hrs, heat the oven at 200 degrees Celsius. Bake the pie for 45 mins and let it beautifully glow into a golden-brown Pie. You can enjoy the pie with fresh tomato sauce.
How To Prepare Salad:
Cut the cucumber into small cubes, add onions, tomatoes, parsley, and vinegar to the salad. Add olive oil, salt, and pepper. That’s it! The salad is ready.
