While eating outside once in a while was the norm whenever you wanted a change, during this pandemic it has become more difficult. But then, change is always needed for a happy life. So to bring a smile on your face, we have brought for you this recipe of Shahi Pakoda Curry, that’s simple to make with ingredients you don’t have to hunt for. If you wanted to eat something tangy and spicy, this is it.
Before we start with the recipe, remember to make sure that you have home-made sour curd/dahi.
Gather Aside These Ingredients For The Pakoda:
- I/2 cup gram flour/besan
- 1 finely chopped onion
- A pinch of soda-bi-carbonate
- 1 tsp fenugreek leaves (Kasuri methi)
- Red chili powder
- Salt as per taste
- Black pepper
Let’s Start Preparing The Batter For The Pakoda As Per The Following Instructions:
Firstly take a bowl and make a mixture of all the above ingredients. Now make a thick batter by pouring water in it little by little. Whip the batter for some time to remove inconsistencies in the texture and make it smoother. While this step may take a little time, whipping it properly will result in fluffy pakodas. Now that the batter is ready, heat oil in a deep pan or kadhai for deep frying. Drop small quantities of gram flour into the oil after heating the oil. Let it cook on medium flame until it changes color and becomes golden brown. It would take you around 5 to 8 minutes. Now take them out and keep them aside. If you prefer less oil, you can also keep it and let it drain on a tissue paper.
Now You Can Start Preparing The Main Kadhi With The Following Ingredients:
- 3 cups of sour curd
- 2 tsp of gram flour/besan
- 1 tsp turmeric powder
- 1 tsp red chili powder
For The Tempering You Need:
- 1 tsp cumin seeds
- ½ tsp fennel seeds
- ¼ tsp fenugreek seeds
- 1 cinnamon stick
- 3 cloves
- 2 to 3 big dry red chilies
- 2 Bay leaves
- 1 tsp mustard seeds
- 2 tsp very finely chopped ginger
- One strand of curry leaves
- ½ tsp whole coriander seeds
Cooking Instructions:
Take a bowl, put sour curd, and add 2 cups of water. Then mix gram flour, turmeric powder, and red chili powder. Beat the mixture with a churner to get rid of any lumps. Now start heating the oil, put cumin seeds, mustard seeds, fenugreek seeds, fennel seeds, whole red chilies, Bay leaves, cloves, cinnamon stick, ginger, and curry leaves. Toss it for a few seconds and then add the curd mixture kept aside. Keep stirring at the start until it starts boiling. Then add salt for taste. Now you can add the pakodas you had fried earlier. Let it simmer on the flame for 8 mins or so. Switch off the gas and garnish it with coriander leaves.
