This paneer dum Biryani filled with veggies will be the perfect day for every special occasion. It adds more charm to the dinner table with a fantastic Aroma that makes everyone taste it is one of the most mouth-watering dishes of all time.
Required Ingredients
- Ghee- 2 tablespoon
- Cinnamon stick-1
- Basmati rice- 350 grams
- Black peppercorns-8
- Cumin seeds- 1 tablespoon
- Fine sea salt- 1 tablespoon
- Cloves 2
- One finely chopped onion
- 2 tbsp ginger garlic paste
- Roughly chopped carrots-50 grams
- Brocolli – 50 grams
- Small cubes of baby potatoes- 50 grams
- Peas- 50 grams
- Green beans- 50 grams
- Ground turmeric- half tablespoon
- Kashmiri Chilli powder – 2 tbsp
- 250 grams low fat Greek yogurt
- Skimmed milk 125 gram
- A small bunch of finely chopped coriander
- A small bunch of finely chopped mint
Method
Step 1
In a big large ball, put the basmati rice and cover it with water. Until the water becomes cloudy, start swirling it and then drain the water. Repeat this process of coating the rice with water until the water becomes clear so that you can remove the extra dirt from the basmati rice. After cleaning the rise again, cover it with water and soak for about 30 minutes.
Step 2
In this step, you need to boil one and a half liters of water with Cinnamon sticks, black peppercorns, Star anise, and salt. Put the stove on and simmer the rice for about 6 minutes or until it has been cooked. Do regularly check it so that the rise to not overcooked. It would be best to cook basmati rice until it was a bit hard.
Step 3
In this step, you need to make the sauce. To start with, melt 1 tablespoon of ghee in a large pan. The pan should be large enough so that it would be able to hold sauce and rice altogether. Next, put the cinnamon stick, cumin seeds, and cloves and let them cook for about 30 seconds under the ghee. Now put the onion in this mixture and steal it until it becomes translucent or soft. Then you need to require ginger and garlic paste. Speed it properly so that the source will combine flawlessly, and it is suggested to cook for about 30 seconds so that the rawness of ginger and garlic can be removed. Now add all the vegetables for about 30 minutes until they a half-cooked, and then you need to add Chilli powder, yogurt, Garam Masala, and turmeric powder. Now cook the whole mixture for about 1 minute and lastly put the paneer into the sauce. After this process, you need to put the flame off and season it with black pepper and salt. Finally, two-third of the sauce will be transferred to another bowl.
Step 4
In another Pan, hit the milk ok but not boil it. Then transfer the milk to a cup and stir through the saffron. In this step, you need to add the remaining ghee to this mixture of saffron and milk.
Step 5
In this step, you need to cover the sauce with one-third of rice and then stop it with some mint and coriander along with one-third of the saffron milk mixture. Repeat this step more Times with the help of sauce you have kept aside previously. Now turn on the lead of the gas, and it is suggested to cook the mixture for further 20 minutes at low, medium heat. Put the flame off after 20 minutes and let the Biryani be cooked under it for about 5 to 6 minutes. Now your mouth-watering vegetable and Paneer dum biryani are ready to serve.
